So Summer is finally starting to make an appearance and it’s time for some fresh and summery meals! Anyone that knows me well knows I have an obsession with halloumi, if halloumi is on the menu in a restaurant then that’s what I will order, no thought needed. I had a great halloumi wrap recently in a local restaurant that came with couscous, I loved it and wanted to create some kind of salad minus the bread! That is how this recipe came about. I had been planning on blogging about it for a couple weeks, so when The Cheese Makers' Choice introduced me to their new Mediterranean cheese making kit, I jumped at the chance to try it out! I like the idea of knowing exactly what’s going into what I am making and being able to control the amount of salt is a big plus!
So I spent my Saturday afternoon crafting my own halloumi, and was surprised at how easy it actually was, of course it takes a little patience! I was worried that my cheese wouldn’t be like the shop bought halloumi I had grown to love, however I was certainly wrong! The finished cheese looked so professional and even had that squeaky quality of halloumi. The couscous salad is such an easy and quick meal to make for the summer. Halloumi is traditionally paired with mint which adds a refreshing twist along with the pomegranate seeds!
