I have been wanting to make these for a long time, my favourite chocolate bar is a Bounty and so these are right up my street! I am always on the lookout for homemade versions of shop bought products, so thought I would experiment and these are very rich! I think coconut and chocolate are a combination made in heaven! One must in this recipe is using coconut oil, without it the coconut filling and chocolate coating will not harden in the fridge and you will be left with a chocolatey coconut mess (which actually doesn't sound that bad!). These little homemade bars look good enough to beat a Bounty any day!
Whilst planning this recipe and if by fate, I discovered The Coconut Company, who happen to make a powdered coconut milk which is vegan friendly, gluten free and dairy free. I thought this would be perfect within the filling and the lovely people there sent me a pack to try. The advantage of using a powdered milk in this recipe is you can control the thickness of the filling by adding a little water at a time. I have been really impressed by the powdered coconut milk, and have also used it to give creaminess to smoothies which will be on the blog soon!
